Kalua Pork

Hawaiian Style Slow Cooker Kalua Pork www.pineappleandcoconut.com  Just like what you have a luau without having to dig a pit in your yard to cook it!
My sister in law Kelli made a version of this for us this summer and we loved it! It can't get any simpler, only uses 4 ingredients, and is really really yummy!  We ate it too fast for a picture, so I borrowed the above pic from the same place I adapted the recipe from hereWe had ours over rice and I used a 4 pound roast. I think I did about 5 ounces of spinach but that could have easily been doubled-just depends on how much you like spinach. ;)

Kalua Pork
Serving size varies (4 pound roast will feed 4-6)

1 4-6 pound pork Butt roast
1 Tbsp liquid smoke, hickory flavored
2-3 tsp red Hawaiian sea salt (or just sea salt if you can't find Hawaiian)
Bag of washed spinach (5 + more ounces depending on your liking)

Pat the roast dry (and you can trim some of the fat if you feel like you need to, but really that's what gives it the flavor). Pierce all over with a fork and rub it liberally with sea salt. Place it in a slow cooker and pour the liquid smoke evenly over the roast. Cook on low for 8-12 hours (I did mine for 10 hours). 

Once it's done shred the entire thing up right in the slow cooker (this is where you could trim some of the fat you notice too as you are shredding), add a bag of spinach and stir it all together. Cover and cook 5-10 more minutes or until the spinach is wilted. 
Serve over rice.

Slow Cooker Chicken Parmesan

So Rick has been home with the new baby while I had to go back to work
and he even makes dinner. This one was delic. You can do pasta with it or just a salad 
if you are trying to do a no carb/gluten free. Adapted from Betty Crocker

1 egg
1/3 cup bread crumbs
1/3 cup shredded Parmesan cheese
1/2 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
4 boneless chicken breasts
1 jar of pasta sauce
1/2 cup shredded Italian cheese
pasta of your choice ( I like the penne)



  • In small shallow bowl, beat egg until foamy. In separate shallow bowl, mix bread crumbs, Parmesan cheese, Italian seasoning, salt and pepper. Dip chicken into egg, then coat evenly with bread crumb mixture; place in cooker. Spread pasta sauce evenly over chicken.
  • 3 Cover; cook on Low heat setting 5 to 6 hours.
  • 4 Sprinkle Italian cheese blend over top. Cover; cook on Low heat setting 10 minutes longer. Meanwhile, cook and drain pasta as directed on package. Serve chicken with pasta.

    Slow Cooker Pineapple Chicken

    Some may say I'm obsessed with slow cooker recipes..I am! Some may also say I'm obsessed with easy, yummy, use whatever you'd liked recipes...and I AM! This has been one of my go to recipes for the last couple months because it's so simple and easy yet yummy, and I always have all the ingredients in my pantry.
    Slow Cooker Pineapple Chicken:
    by: I don't remember where I picked this up from
    3 skinless big chicken breast (or more if you have a bigger family)
    1 20oz can of crushed pineapple
    1 15 can of black beans, rinsed and drained
    salsa (I used about a cup to a cup and a half.)
    Throw all the ingredients into the crock pot, cook on high for 3 hours, or on low for 6 hours take the chicken out shred it, then throw it back into the mixture, let it cook just a little longer and you're done!! We've ate this on rice, on chips, in tortillas, pretty much on everything.. It is a bit runny (which is yummy on rice) but you might want to drain some of it if you plan on throwing it on chips or something that could make it soggy. Plus this recipe is great because you can add more beans maybe some white beans, some cilantro, maybe some extra heat-whatever you like!

    BBQ Chicken Sliders


    BBQ Chicken Sliders

    4 boneless chicken breasts
    1 bottle of BBQ sauce of your choice
    1 can of coke
    1 clove of garlic
    1/2 tsp of pepper or 1 tsp depending on the kick you want
    1/2 tsp of kosher salt
    1/4 tsp of red pepper flakes
    coleslaw of your choice
    slider rolls (I like the hawaiian rolls in the grocery deli isle)

    Mix all ingrediants into crock pot, then add chicken breasts, cook on low for 6-8 hours. Pull apart chicken, toast rolls, top with coleslaw and bbq sauce if you'd like!!!

    Slow Cooker Fudge Cake

    Ingredients:
    Cake: 1 cup Flour ½ cup Sugar 2 TBS Cocoa Powder 2 tsp Baking Powder ½ tsp Salt 2 TBS Vegetable Oil ½ cup Milk 1 tsp Vanilla extract ½ cup chopped nuts (optional) Hot Fudge: 1 ½ cup packed Brown Sugar ½ cup Cocoa Powder 2 3/4 cup hot Water

    Directions:
    Spray crock-pot with non-stick cooking spray. Mix flour, sugar, cocoa powder, baking powder, and salt. Add milk, vanilla, vegetable oil, and (optional) nuts. Spread mixture in bottom of crock-pot. Mix together brown sugar, cocoa powder, and hot water. Pour over cake mixture in crock-pot. Cover and cook on high for 2 - 2 ½ hours. Cake is done when toothpick stuck in center comes out clean. Serve warm with ice cream.

    Slow Cooker Honey Sesame Chicken

    My friend found this recipe on Pinterest and told me I HAD to try it and everyone knows how much I loveee crock pot meals. They are so easy when you aren't sure what exact time you'll be eating dinner.. This recipe is SUPER easy and it was delicious!!
    Crock Pot Honey Sesame Chicken
    Recipe adapted from Babycenter.com

    4 boneless, skinless chicken breasts (thighs would be fine too)
    Salt and pepper
    1 cup honey
    1/2 cup soy sauce
    1/2 cup diced onion
    1/4 cup ketchup
    2 tablespoons vegetable oil (I used olive oil)
    2 cloves garlic, minced (I just used some garlic powder)
    1/4 teaspoon red pepper flakes (optional)
    4 teaspoons cornstarch dissolved in 6 Tablespoons water
    Sesame seeds

    Directions Season both sides of chicken with salt and pepper, put into crock pot. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken. Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through. Remove chicken from crock pot, leave sauce. Dissolve 4 teaspoons of cornstarch in 6 tablespoons of water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened. Cut chicken into bite size pieces, then return to pot and toss with sauce before serving. Sprinkle with sesame seeds and serve over rice or noodles. YUMM!!

    Slow Cooker Chicken Enchilada Soup

    I've been wanting to try this recipe for a long time now and after I saw Candice's post about the YUMMY enchiladas I thought I would give it a try! And I am soo glad I did because it has the best flavor to it! My hubby even went back for seconds!(and he doesn't do that often;))
    Chicken Enchilada Soup
    2 tsp olive oil
    1/2 c chopped onion
    3 cloves garlic, minced
    3 c low sodium fat-free chicken broth
    8 oz can tomato sauce
    1-2 tsp chipotle chili in adobo sauce
    1/4 c chopped cilantro (plus more for garnish)
    15 oz can black beans, rinsed and drained
    14.5 oz can petite diced tomatoes (I used the ones with green chiles in it, for a kick)
    2 c frozen corn
    1 tsp cumin
    1/2 tsp dried oregano
    2 8 oz skinless chicken breasts
    1/4 c shopped scallions (optional for topping)
    shredded cheddar cheese (for topping)
    sour cream (optional for topping, I used greek yogurt-taste the same and healthier)

    Directions: Heat oil in a saucepan over medium-low heat. Add onion and garlic and saute until soft (3-4 mins). Slowly add chicken broth, tomato sauce, and chipotle adobo sauce and bring to a boil. Add Cilantro and remove from heat. Pour into crock pot. Then add drained beans, diced tomatoes, corn, cumin, oregano and stir. Add chicken breasts; cover and cook on low heat for 4-6 hours. Remove chicken and shred with two forks. Add chicken back into soup. Add salt, pepper and more cumin  to taste. Serve in bowls and top with sour cream, cheese, scallions, cilantro, avacodo, and whatever else you might like!
    Tips: I added a lot more cumin and some tabasco because we like it extra spicy in our household. I also wish I didn't put 2 cups of corn in it-because it was soo much corn, a little too much for my liking. Make sure you put the cilantro in it because it gives it a really yummy flavor. Enjoy!

    Salsa Chicken Crock Pot



    I'm sure most of you know how to make this, but I had to post it, because it is sooo EASY!
    Ingredients:
    any amount of chicken breasts
    salsa
    crock pot

    Directions: Place frozen chicken breasts (any amount) in crock pot. Pour any amount of salsa (as long as chicken is covered). Cook on low until the chicken is done. Tear apart with a fork. ( You can do this halfway too if you want.)

    Make a salad ( Like Cafe Rio's)
    Chicken tacos
    Anything else. The chicken makes great left overs and it is again sooo EASY

    Slow Cooker Italian Chicken

    My friend from high school gave me this recipe and I have to say I was pretty surprised! It was super easy to make-those are my favorite kind of dinners and it was scrumptious! Even my some what picky hubby LOVED it! :)

    Crock Pot Italian ChickenRecipe by Gabby Riley
    2 chicken breasts (can be frozen, I used fresh)
    2 cans of cream of chicken soup
    1 8oz package of cream cheese
    1 package of Good Seasons Italian dressing mix

    Put chicken into the crock pot. Add all the ingredients in the order listed above on top of chicken. Cook on high for 4 hours. Shred chicken while still in the crock pot with a fork. Stir it all up and serve over rice, Bowie, or penne pasta. Can that be easier? YUMMY!!!
